L’s kitchen: spring into spring cinnamon rolls

With the deceptively nice days in between extremes, many Eagles may be hoping for a real spring instead of fluctuating temperatures from the points of freezing to boiling. Wish this dream into existence with these spring-like rolls (not spring rolls), or enjoy the warmth of the rolls on one of Cincinnati’s classic winter days in late April. If you need to make sure you have everything, here are the ingredients and supplies you’ll need (don’t worry- everything will be listed in the recipe as well, so you won’t have to glance back up for measurements.)

  • 2 cups flour
  • 6 tablespoons regular sugar
  • ⅔ cup brown sugar
  • ½ cup powdered sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 12 tablespoons butter (5 cold, 6 melted, 1 soft)
  • ¾ cup and ½ tablespoon milk
  • 2 teaspoons cinnamon
  • ¾ teaspoon vanilla extract
  • 1 ounce soft cream cheese

 

First, preheat the oven to 375 degrees. Combine 2 cups of flour, 3 tablespoons of sugar, 1 tablespoon of baking powder and 1 teaspoon of salt. Grate 5 tablespoons of cold butter into the dough before adding in ¾ cup of milk and stirring just until it’s combined. Rub excess flour on your counter, and use your hands to make the dough into a ball. Next, roll your dough into a rectangle about one foot long and 10 inches wide. Set this aside, and combine ⅔ cup of brown sugar, 3 tablespoons of normal sugar, 2 teaspoons of cinnamon, 4 tablespoons of melted salted butter and ½ teaspoon of vanilla extract to make your filling. Evenly spread this on your dough, and carefully roll it into a log. Wrap in plastic, and freeze for about 10 minutes. After, unwrap and cut the log into 10 even rolls. Melt 2 tablespoons of butter in a pan with a 9-inch diameter, then evenly place your rolls in the pan. They will grow when baking, so make sure they have room. Bake the rolls for 30 minutes. Meanwhile, make the icing by beating 1 ounce of softened cream cheese, 1 tablespoon of melted salted butter and ¼ teaspoon of vanilla extract with a hand mixer. Slowly add ½ cup of powdered sugar in small increments. Once all the powdered sugar has been incorporated, add ½ tablespoon of milk and store in the fridge until ready to use. Let your rolls cool for about 10 minutes, then decorate with icing and enjoy!
