Although it started as a religious celebration, St. Patrick’s Day has become a beloved day of appreciation for Irish culture. Let’s celebrate by making a truly Irish treat: apple cake. - 4 tablespoons of butter
- 1 cup of sugar
- 1 egg
- ¼ cup of chopped walnuts
- 1 teaspoon of vanilla extract
- 4 Granny Smith apples, peeled and diced
- 1 cup of flour
- ½ teaspoon of baking soda
- ½ teaspoon of baking powder
- ½ teaspoon of cinnamon
- ½ teaspoon of nutmeg
- ½ teaspoon of salt
- Vanilla ice cream ( optional)
First, preheat the oven to 350 degrees. Grease an 8-inch square dish and set aside. Cream together four tablespoons of butter and one cup of sugar. Add 1 egg, ¼ cup of chopped walnuts, one teaspoon of vanilla extract and four cubed Granny Smith apples (peeled before dicing). Mix one cup of flour with ½ teaspoon each of baking soda, baking powder, cinnamon, nutmeg and salt. Sift this mixture into the wet ingredients and stir. Pour the batter into the greased pan and bake for 45 minutes. Remove from the oven and let it cool for about five minutes before removing it. Finally, serve alone or with vanilla ice cream—dig in!
