Here’s what you’ll need for this recipe. Don’t worry – the measurements are listed in the recipe too, so you don’t have to worry about glancing up and down over and over.
- 1 cup of all-purpose flour
- 2 cups of whole wheat flour
- 2 teaspoons of cinnamon
- ¼ cup of honey
- ½ cup of brown sugar
- ½ cup of shortening
- 1 teaspoon of vanilla extract
- 1 teaspoon of baking powder
- ½ teaspoon of baking soda
- ¼ teaspoon of salt
- ¼ cup of milk
Using an electric hand mixer, combine ½ cup of shortening and ½ cup of brown sugar. By hand, mix in ¼ cup of honey and 1 teaspoon of vanilla extract. In a separate bowl, mix 1 cup of all-purpose flour, 2 cups of whole wheat flour, 1 teaspoon of baking powder, ½ teaspoon of baking soda, ¼ teaspoon of salt, and 2 teaspoons of cinnamon. Add this mixture to the first bowl along with ¼ cup of milk. Stir until combined. Cover the bowl and chill for 1 hour. When the batter is almost ready, preheat the oven to 350 degrees and grease 3 large cookie sheets. Make sure your countertop is clean before lightly flouring the surface. Roll the dough to a thickness of about ⅛ of an inch. If it’s too crumbly to roll, add water in increments of about ¼ teaspoon at a time. Cut the dough into even rectangles, and place on the greased pan, leaving at least ½ an inch between each. Bake for about 10 minutes or until crisp. Let your crackers cool before serving, saving, or using for s’mores!
